spicy stuffed bbq peppers

Grill the Pepper Shells:

4 SunSelect Sweet Bell Peppers

Set the barbeque to medium heat and allow to warm up. In the meantime, cut the 4 SunSelect Sweet Bell Peppers in half and remove seeds. Once the barbeque is at temperature, place the halves onto the grill – cut side down. Cook on medium heat for 15 minutes. While cooking, prepare the filler.

Prepare the Filler:

1/2 lb ground beef
1/4 cup fine chopped onions
2 cups cooked rice
1 can of corn
5 strips of shredded crispy bacon
salt and seasoning to taste
Frank’s Red Hot sauce to taste

Sauté the ground beef and the fine chopped onions in a medium sauce pan. Add salt, seasoning and hot sauce to taste. Once meat is browned, stir in cooked rice, corn, and shredded crispy bacon. Heat through to release and combine the flavours.

Fill the Grilled Pepper Shells:

shredded marble cheese

Place BBQ’d peppers on flat baking dish. Scoop filler into each pepper shell. Top with cheese and broil in oven until cheese is melted.
